Poutine—that unholy combination of French fries, gravy, and cheese curds—may have come down from Quebec, but there’s certainly a Delta spirit to the dish. So no surprise that our chefs are coming up with whole new ways of topping their fries. Ready to set your diet aside? Here are the best spots to get loaded. – BOYCE UPHOLT
1 Duck Fries with Fresh Mozzarella
Folks say duck fat is healthy—you know, it’s got those “good” fats. There must be a reason that adjective is always encased there in quotes, but when it tastes this good, it doesn’t really matter. The fresh mozz and duck meat stew up their own gravy, resulting in what may be the Delta’s most sinfully delicious dish. 222 Howard Street, Greenwood, Monday through Saturday, 11am to 11pm.
2 Bleu Cheese Poutine

Hayden Hall’s fry game is already strong: Every day they’re served up twice-fried, hand-cut and tossed in garlic confit and fresh Parm. But every once in a while, he goes all out. Like this monster: it’s topped with bleu cheese fondue, grilled and pickled onions, and a light sprinkle of goat cheese curds. 3 The Munchies

These pulled pork-topped potato wedges are accompanied by a stately avocado sour cream—oh, and a couple of garnishes a bit less refined: nacho cheese and quick pickles. Call it high-class low brow, or deliciously junky gourmet—or maybe just call it delicious. 119 North Main Street, Drew, Tuesday through Friday, 11am to 5pm.
