Hailing from New Orleans, Bananas Foster was created in 1951 at Brennan’s Restaurant. This is the basic recipe from Steve Blaylock, the bona fide Bananas Foster guru of Northeast Mississippi, but think seasonal fruit in addition to bananas! At a Delta Magazine Cookbook signing, hosted by Nancy’s Interiors inside Joyful Creations Gift Market, he made a simply delicious version (tableside, flames and all!) with strawberries and pecans.
1/4 stick butter
1/4 cup light brown sugar
2 bananas, sliced
1/4 cup banana liqueur
1/2 teaspoon cinnamon
3 tablespoons Bacardi 151 rum
In a 10-inch skillet, melt butter. Add brown sugar and stir until dissolved.
Add bananas and cook until bubbly. Slowly pour rum around the sides of the skillet. Gently pull the skillet partly away from the flame allowing the rum to ignite. Toss the cinnamon into the flame. Stir until the flame is out.
Pour over vanilla ice cream and top with whipped cream. Wonderful also served over warm cake.
