Hot Tamales Wrapped in Bacon

These bite-sized pick-ups from the Delta Magazine kitchen were inspired by “fiesta tamales,” an appetizer attributed to Mrs. Henry Self of Marks in Our Delta Dining cookbook (1970). Choose regional tamales that are firm.

1 dozen Delta hot tamales, shucked
18 bacon slices, cut in half
Preheat oven to broil.
Cut each tamale into 3 pieces or about 1 inch each. Wrap bacon strips around cut ends of tamales. Trim ends of bacon pieces as needed to wrap neatly. Secure each with a toothpick. Broil until bacon is crisp. Serve warm or at room temperature.
