MoonPie Bread Pudding with RC Cola Sauce

052Nola Chef Chris Grant’s latest dessert creation with nostalgic country store flavors of the Deep South.

24 mini MoonPies
6 whole eggs
4 cups half and half
1 cup heavy cream
1/2 teaspoon nutmeg
2 cups granulated sugar
2 large packs sweet rolls
3/4 cup RC cola
1 box confectioners’ sugar

Preheat oven to 350 degrees. Whisk eggs and sugar till fluffy. Add nutmeg and whisk in cream and half and half. Add bread and let soak for 30 minutes.

Layer half of the MoonPies in the bottom of a greased pan. Pour half of the bread pudding mixture on top. Repeat with the remaining MoonPies and other half of bread pudding mix.

Bake for 45 minutes and check. When ready, let cool for 1 hour.

Over low heat, mix confectioners’ sugar with a little RC cola at a time until desired consistency. Serve warm.
