Sweet Tea Pimm’s Cup

015Giardina’s Restaurant inside the Alluvian Hotel debuts a new signature cocktail menu, employing up-to-the-minute mixology trends and techniques, seasonal offerings and playful twists on the classics. House-infused liquors add depth to many of the new cocktails, including their Deep South variation on the Pimm’s Cup, made with Hendrick’s gin infused with sweet tea. “Pimm’s is a dark tea color and sweet tea is quintessential Southern,” says manager Josh Crump. “It was a natural to match the two together.”

2 ounces sweet-tea infused Hendrick’s gin*
2 ounces Pimm’s No. 1
2 ounces ginger ale
Squeeze of fresh lemon juice
In a highball glass filled with ice, pour sweet tea-infused gin. Add 2 ounces Pimm’s No. 1 and top with ginger ale. Finish with a squeeze of lemon and garnish with a lemon wheel.

*To make sweet tea-infused gin: Pour a fifth of Hendrick’s gin into a large saucepan or microwave safe dish. Gently warm on stove or heat about 30 seconds in the microwave. Place about 6 family sized tea bags and 1 cup sugar in cheesecloth or a large coffee filter held over an large empty bowl. Pour gin over it to filter, two or three times, until desired strength. With a funnel, transfer infused gin back into bottle.
